Crispy Courgette Fingers!

Perfect as a side for any meal or as a tasty snack!

What you need:

- 1 Large Courgette
- 1 Pack of Breadcrumb
  Coating
- 2 Eggs
- 1 Tbs Paprika
- 1 Tsps Black Pepper
- 1 Tbsp Oregano


What to do:

- Wash the courgette and chop into fingers (approximately 6cm x 2cm)

- Crack both eggs into a bowl and beat well. Pour the breadcrumbs into a second bowl and mix in the Paprika, Cracked Black Pepper & Oregano.

- Now for the messy bit! Dip each courgette finger into the egg and then roll in the breadcrumb mixture each finger is evenly coated.

- Place each finger onto a baking tray. Preheat the oven to 200C and cook for around 35 minutes or until golden brown. Turn once in between to prevent fingers from sticking to the tray.

Tip: Delicious served with a spicy salsa dip!
