Veggie Spring Rolls
Fresh and scrumptious, these veggie spring rolls are packed full of healthy veg, herbs and spices!

1 Tsp Ginger
1 Tsp Mint
1 Tsp Garlic Powder
1 Tsp Black Pepper
1 Tbsp Vegetable Oil
1 Tsp Soy Sauce
50g Shredded Carrot
50g Shredded White Cabbage
50g Bean Sprouts
3 Spring Onions
Spring Roll Wrappers
Sweet Chili or Plum Sauce (For Dipping!)
So Here's what to do!
Step 1
Heat the oil in a frying pan or wok. Stir fry all the vegetables for 2-3 minutes or until soft. Add the ginger, mint, garlic and black pepper.
Step 2

Add the soy sauce and stir well. Remove from the hob and tip the mixture onto a plate to cool for a few minutes. Preheat the oven to 200 degrees C.

Step 3

Divide the mixture equally between 6 spring roll wrappers. Add a dollop of the mixture towards one end of the wrapper, fold the ends in and roll firmly.

Step 4

Bake for 15-20 minutes or until crisp and golden. Serve with delicious sweet chili or scrumptious plum dipping sauce!
