Easy Peasy Herb Stuffed Peppers!
Serves 4
These peppers are not only easy peasy to prepare, but are packed full of flavour and healthy too!


2 Tsp Oregano
1 Tsp Basil
1/4 Tsp Cayenne Pepper
1 Tsp Garlic
1 Tsp Parsley
4 Green or red peppers
1/2 Cup Chopped Onion
2 1/2 Cups cooked brown rice
1 Can (8oz) tomato sauce
1/4 Cup vegetable broth

Step 1
Cut tops off peppers, remove seeds. Place peppers cut side down on a plate, cover with cling film and zap for  2-3 minutes.

Cook onion over a medium heat for 5-7 minutes. Remove from heat and stir in the rice, cayenne pepper and garlic.

In a small saucepan, bring tomato sauce and broth to a boil. Stir in the Basil, Oregano and Parsley. Stir around half a cup of sauce into the rice mixture. Spoon into peppers.

Step 4
Place in a greased baking dish, cover and bake at 200 degrees C for about 30 minutes.

Step 5
Sprinkle with a little Parmesan cheese (optional but extra tasty) and bake uncovered for a further 5-10 minutes. Serve with remaining sauce!
