Carrot, Orange & Coriander Soup, with a hint of
The nights are getting lighter but we know summer is not quite here
yet! So why not whip up a bath of delicious Carrot, Orange & Coriander
Soup with a hint of Cinnamon to keep you warm until summer arrives!

1 tbs olive oil
2 medium onions, sliced
450g (1lb) carrots, diced
900ml (1½ pints) vegetarian stock
300ml (½ pint) orange juice
pinch Sea Salt
Ground Black Pepper
1 tsp Coriander Leaf
Heat the oil and gently fry the onions over a low heat, until very soft.
Add the carrots and fry for 1-2 minutes.
Stir in the stock, orange juice, Ground Coriander, Ground Cinnamon and
simmer, covered, for 40-50 minutes or until the carrots are very
Liquidise the soup to your desired consistency, season to taste and
serve garnished with Coriander Leaf and grated carrot.
Enjoy with some fresh crusty bread!
